Pickled Fungus
Served as a side dish

Ingredients
50g Black Fungus
20g Red Chilli
10g Chopped Garlic
50g Chopped Onion
20g Chopped Spring Onion
Small amount of Sesame Seeds

Seasoning
2 tbsp Gold Plum Superior Light Soy Sauce
½ tbsp Gold Plum Abalone Sauce
1½ tbsp Sugar
 A few drops of Gold Plum Pure Sesame Oil
5 tbsp Gold Plum Mature Vinegar

Preparation
1. Soak the black fungus in cold water for 20 mins
2. Cut fungus in smaller pieces, and cook in boiling water for 3 mins.
3. Remove from boiling water and soak in ice water for 1 min. Drain water through sieve
4. Mix the garlic, onion and spring onion with the seasonings
4. Put black fungus in to a glass container and add the seasoning. Cover the container with cling film and chill for 7 - 24 hours
5. Remove from fridge and sprinkle with toasted sesame seeds, and serve
