Pickled Fungus

Preparation
1. Soak the black fungus in cold water for 20 mins
2. Cut fungus in smaller pieces, and cook in boiling water for 3 mins.
3. Remove from boiling water and soak in ice water for 1 min. Drain water
through sieve
4. Mix the garlic, onion and spring onion with the seasonings
4. Put black fungus in to a glass container and add the seasoning. Cover the
container with cling film and chill for 7 - 24 hours
5. Remove from fridge and sprinkle with toasted sesame seeds, and serve
